If you’re tired of pulling out every pot and pan in your kitchen just to make dinner, this easy ground beef burrito bowl recipe is for you. We also love how incredibly customizable it is for picky eaters, but we will start with the basic ingredients. To make this recipe, you’ll need:
- 1 lb lean ground beef
- 1 onion, chopped
- 1 yellow bell pepper, seeded and diced
- 1 cup diced tomatoes, canned or fresh
- 1 can (4 oz) diced green chiles, drained
- ¼ cup taco seasoning
- 1 can (1 1/2 cups) black beans, drained and rinsed
- 1 cup raw long grain rice (long white rice or brown rice) – our favorite is Jasmine Rice
- 2 ½ cups beef broth or water
Optional Toppings for Garnish
- Freshly chopped fresh cilantro
- Fresh lime juice
- Diced avocado
- Diced tomato
- Pico de Gallo
- Shredded cheese
- Sour cream
- Tortilla chips

If you know you’ll be using diced onion in more than one recipe this week, dice a couple and store them chopped in your fridge for seven to ten days if you keep them in an airtight container.

I then shred the chicken for use in many recipes and return the bones to the Instant Pot to make homemade stock which I also freeze in 2 cup Souper Cube portions. It’s super easy to swap out the ground beef for other proteins like shredded chicken breasts, ground turkey or ground chicken. Chicken burrito bowls are another family favorite! If you switch to a poultry based recipe, sub chicken stock for the beef broth.
For a vegetarian version, simply substitute the ground beef with crumbled tofu or diced portobello mushrooms.
You could also sub pinto beans for the beef and make an all bean version.
If you’re feeling adventurous, try adding different veggies like diced zucchini or corn.

Quick, easy, and very delicious, this One-Pot Rice, Beans, and Ground Beef Burrito Bowl recipe will become a family staple for busy nights.
Ingredients
- 1 lb lean ground beef
- 1 onion, chopped
- 1 yellow bell pepper, seeded and diced
- 1 cup diced tomatoes, canned or fresh
- 1 can (4 oz) diced green chiles, drained
- ¼ cup taco seasoning
- 1 can (1 1/2 cups) black beans, drained and rinsed

Instructions
1. In a large skillet over medium-high heat, cook the ground beef, onion, and bell pepper. As the beef cooks, break it apart with a spoon, until it's browned and cooked through. This should take about 8-10 minutes. Remove the beef and vegetables, draining excess fat.
2. After the beef is removed, add the tomatoes and green chiles. If the tomatoes are fresh, cook for about 5 minutes on medium heat or until softened.
Return the beef and vegetables to the skillet. Add the taco seasoning. Stir well to combine.
3. Add the drained black beans, stirring everything together and let it simmer for about 5 minutes.
4. Add the rice and beef broth to the skillet. Bring to a boil. Reduce the heat to low, cover the skillet, and simmer for 20 to 30 minutes or until the rice is tender. Stir often to avoid burning.
5. Garnish the beefy burrito skillet with your choice of toppings and enjoy!
