Meal Prep Pro Tips

Here are some meal prep tips you can follow to make cooking this recipe even quicker and easier.

If you know you’ll be using diced onion in more than one recipe this week, dice a couple and store them chopped in your fridge for seven to ten days if you keep them in an airtight container.

We love making taco seasoning ahead of time and keeping it in the pantry. Use my homemade bulk taco seasoning to give this recipe a spicy twist. Bonus – you’ll have homemade taco seasoning on hand to use in many more recipes!

If you have an Instant Pot, cooking dried beans is one of our favorite ways to utilize this handy kitchen appliance. Make beans ahead of time and then freeze the leftover using 2 Cuper Souper Cubes whenever you need beans in meals.

You can also make your own homemade stock, including chicken, turkey, or beef. I prefer to cook whole chickens in my Instant Pot. I then shred the chicken for use in many recipes and return the bones to the Instant Pot to make homemade stock which I also freeze in 2 cup Souper Cube portions. Learn how easy it is to do that in this post.

Delicious Variations on This Beef Burrito Bowl Recipe

This recipe is truly versatile, so don’t be afraid to experiment and make it your own! You can turn it into a one pot chicken burrito bowl, or a vegetarian homemade burrito bowl full of beans, corn and other veggies as well.

It’s super easy to swap out the ground beef for other proteins like shredded chicken breasts, ground turkey or ground chicken. Chicken burrito bowls are another family favorite! If you switch to a poultry based recipe, sub chicken stock for the beef broth.

For a vegetarian version, simply substitute the ground beef with crumbled tofu or diced portobello mushrooms.

You could also sub pinto beans for the beef and make an all bean version.

If you’re feeling adventurous, try adding different veggies like diced zucchini or corn.

How to Store and Reheat Leftover Beef Burrito Bowls

This recipe reheats really well, so you might consider doubling the recipe for quick lunches throughout the week.

Simply portion leftovers into meal prep containers and refrigerate for up to four days. When you’re ready to reheat, microwave for 1-2 minutes, or until heated through. If you don’t have a microwave, this heats up really well in a steam oven too.

How do I prevent the rice from sticking to the pot?

To keep the rice from sticking to the pot, stir the rice occasionally, and make sure there’s enough liquid in the pot. If needed, you can add a bit more broth or water.

Can I freeze one-pot burrito bowls for later?

Absolutely! You can freeze these beef burrito bowls well. Store in airtight containers for a convenient future meal.

Is it possible to make a one-pot burrito bowl without rice?

Certainly! You can use alternatives like quinoa, cauliflower rice, or skip the grain altogether for a low-carb option. This will change the cooking time signficantly as you won’t need 20 minutes to cook the rice.

Ingredients

Optional Toppings for Garnish

  • Freshly chopped fresh cilantro
  • Fresh lime juice
  • Diced avocado
  • Diced tomato
  • Pico de Gallo
  • Shredded cheese

Instructions

saute ground beef, onion, and pepper in one skillet

    1. In a large skillet over medium-high heat, cook the ground beef, onion, and bell pepper. As the beef cooks, break it apart with a spoon, until it's browned and cooked through. This should take about 8-10 minutes. Remove the beef and vegetables, draining excess fat.

    2. After  the beef is removed, add the tomatoes and green chiles. If the tomatoes are fresh, cook for about 5 minutes on medium heat or until softened.
Return the beef and vegetables to the skillet. Add the taco seasoning. Stir well to combine.

    add beans
    3. Add the drained black beans, stirring everything together and let it simmer for about 5 minutes.

    4. Add the rice and beef broth to the skillet. Bring to a boil. Reduce the heat to low, cover the skillet, and simmer for 20 to 30 minutes or until the rice is tender. Stir often to avoid burning.
