Garden Update 8/28 ~ and What to do with a Bumper Crop of Broccoli

Rain does a garden good! It rained and rained all day this past Sunday. And this morning when I made it out to pick, I ended up with almost 5 gallons of tomatoes, a huge bowl full of broccoli, sweet peppers, kohlrabi, and tons of green beans. Let’s not forget the kale and swiss chard…

But my star veggie right now is broccoli. I harvested the main heads weeks ago, but all of my plants are developing tons of side shoots that I keep picking. It adds up to be quite a lot of broccoli – more than we can eat.

I’ve been brainstorming ways to use up my broccoli, and here’s what I’ve come up with:

What to do with a bumper crop of broccoli ~

1. Blanch and freeze it. Here’s a great tutorial here at one of my favorite resources – Pickyourown.org.

2. Eat  it ~

  • Broccoli Salad
  • Veggie Stir Fry
  • Beef & Broccoli Stir Fry
  • Saute it in olive oil with garlic
  • Saute it in olive oil and add soy sauce
  • Chicken & Rice Casserole with Broccoli…{I might freeze some extras while I’m at it}
  • And most boring, steam it
  • Broccoli Garlic Quiche

3. Make soup and freeze for another day! Here are a couple yummy soup recipes:

Last week I planted quite a few seeds – 5 rows of peas, a bunch of carrots, and spinach. Over the weekend we hosted a picnic for my husband’s 20th high school reunion out at our barn, though, with over 60 people in attendance and tons of kids. {The flowers pictured above were my last ditch effort to “pretty” up the barn.} The kids had a blast “weeding” with my hoes. I forgot about my newly planted seeds and I know some of them were stomping on my newly planted rows. So, I’m sure I need to get out there and plant again. Ooppppps. 😉

    I am waiting for the tomatoes to turn red they are getting big but stay green. Planted carrots this weekend before the rain and now have spouts coming up! First time planting them so I am excited to see how they turn out.

    I’ve tried “The Best Broccoli of Your Life” recipe, and it really was the best broccoli I’ve ever had! I didn’t have pine nuts, but I’m sure it would be even better with them. The combination of lemon,garlic and Parmesan cheese is really amazing.

    Your broccoli is GORGEOUS! I wish I liked it more than I do. However, I did see a Broccoli Mellun over at Curry and Comfort’s blog that looked quite good. You might check it out. Looks like you have a wonderful game plan already!
