Easy Lasagna Soup – Quick and Delicious One Pot Meal!

I’m excited to share a delicious soup recipe with you today. Soup enjoys a special place in my heart, not only because it’s easy to make, frugal, and delicious, but also becauase of the family memories it evokes.


Every time my family traveled to my grandparents’ house when I was younger, we were always greeted with a delicious pot of soup. Normally it was bean soup that I wasn’t overly excited about when I was younger, but I came to love that soup as I got older. My grandma grew up dirt poor and she knew how to make do with very little – hence the bean soup. My grandma died a couple of years ago, but her soup legacy will also live on through her kids and grandkids.

While I still love a great pot of brean soup, I have moved beyond it somewhat as my kids turn up their noses at the bean soup the same way I used to. This Lasagna Soup recipe that I’m sharing with you today is one of our family favorites. I hope you like it too!

Easy Lasagna Soup – Quick and Delicious One Pot Meal!

This easy lasagna soup is a real treat and tastes like a delicious lasagna but with a lot less work! Seriously, this recipe comes together in just about twenty minutes so it will be on your table in a snap! And since it’s also a one-dish meal, clean up is minimal.

The first part is making the soup. Simply brown your meat and drain the fat. Then add chicken stock, Ragu No Sugar Added Tomato Sauce, fire roasted tomatoes tomatoes, and tomato paste.  Bring to a boil. Add 1/2 to a whole box of noodles (more noodles make the soup less souper!) of choice and cook until the noodles are done. If you’d rather cook the noodles separately, by all means, do that. My husband sometimes complains when I cook noodles in the soup {as they can get mushy in left-overs}, but the desire to have fewer dishes to wash means I usually just dump them all in and call it good. Honestly, there aren’t many leftovers of this soup anyway!

While the noodles are cooking, mix the cheeses together in a separate bowl. Spoon desired amount into soup bowls, top with soup and enjoy all the goodness of lasagna in about tweny minutes!

  • 1 pound ground beef
  • 1 pound Italian sausage
  • 8 cups chicken stock
  • 1 24 ounce jar favorite spaghetti sauce - I recommend no-sugar added or Organic Ragu Sauce
  • 1 14.5 ounce can fire roasted tomatoes
  • 2 TBS tomato paste
  • 1 box fusilli noodles, or other noodles of your choice
  • 8 ounces ricotta cheese
  • 1/2 cup shredded Parmesan cheese
  • shredded mozzarella cheese, if desired.


  1. In a stock pot,brown the ground beef and the Italian sausage over medium heat. Drain the grease and return to medium heat. Add the spaghetti sauce, tomatoes, tomato paste, and chicken stock. Bring to a boil and add fusilli noodles. Boil 10 minutes.
  2. While the noodles are boiling, mix ricotta and parmesan cheese. Add salt and pepper to taste.
  3. Spoon a small amount of ricotta mix into a boil. Ladle soup on top, add shredded mozzarella if desired.
  4. Enjoy!
