What’s In This Eggnog Waffles Recipe

Before Christmas, my kids asked me to buy them eggnog. It’s not something we generally get, and I didn’t think they’d like it. Boy, was I right. They didn’t like it that much and the eggnog sat my fridge for a couple weeks while I pondered how best to put it to use.

This morning, the kids wanted waffles for breakfast and I didn’t have any milk. I saw that carton of leftover eggnog sitting in my fridge and delicious inspiration struck! Subbing leftover eggnog for milk makes fantastic waffles!

Freezer Friendly Leftover Eggnog Waffles

Here’s what you need:

  • All-purpose white whole wheat flour: I use freshly ground hard white wheat flour. Whole wheat adds a hearty and nutritious base to the waffles.
  • Baking powder: Use aluminum-free baking powder to make your waffles light and fluffy.
  • Salt: Balances the flavor and brings out the sweetness of leftover eggnog.
  • Eggs: Use farm fresh eggs if you have them. Eggs bind everything together and keeps your waffles moist.
  • Leftover eggnog: Adds a classic holiday flavor and keeps your waffles tasting fresh, fluffy, and delicious.
  • Coconut Oil: Melt this before adding it to the recipe. While I enjoy the flavor of coconut oil in my baked goods, my children prefer not to taste it. Choose a flavorless variety.
  • Vanilla: Adds warmth and a hint of sweetness to your waffles.

How to Make Eggnog Waffles

This yummy recipe serves three purposes. First, it’s a great way to use up leftover eggnog. Second, it’s an easy way to start the day off on a healthier note. Made with fresh eggs, organic white whole wheat flour, coconut oil, and organic eggnog, this recipe is much lower in sugar than most breakfast cereals you may be eating.

It also fills you up better. Third, freezer friendly recipes like this one help me ditch convenience items like cereal. I’m a firm believer that ditching cereal isn’t hard with a little prep.

Homemade waffles are easy to make. Start by heating your waffle iron.

Mix dry ingredients in a large bowl and set aside. In a separate bowl, whisk eggnog, eggs, and vanilla. Slowly stir in melted coconut oil.

Combine wet mixture with dry ingredients and stir slowly until a thick batter occurs. (You can store the batter in the fridge for one day if you’d like.)

To make the waffles, spray the waffle iron with cooking spray. Add just enough waffle batter to the heated waffle iron. Be careful not to overfill or the batter will run over and make a huge mess!

Serve waffles immediately with pure maple syrup, or place in oven to keep them warm.

Recipe Tip

For the best waffles, make sure the steam is all gone from the waffle iron before removing your waffles.

Variations on Eggnog Waffles

Of course, the traditional way to eat waffles is with butter and maple syrup. Eggnog has hints of cinnamon and nutmeg. Play off those spices by serving your waffles with whipped cream and sprinkling with more cinnamon.

For a really decadent waffle, add a few chocolate chips to the batter before cooking.

If you don’t actually have this much leftover eggnog, use buttermilk or regular milk instead. The waffles themselves will still be delicious. This is a pretty versatile recipe.

How to Store and Reheat Eggnog Waffles 

Eating warm, fresh waffles is truly the best. If you end up with leftover waffles, though, they can easily be kept in the refrigerator for 3-5 days. Keep them in an airtight bag or container.

Can I Freeze Homemade Waffles?

You can absolutely freeze waffles. I generally quadruple the recipe. I get enough to feed my family AND have some for the freezer. My kids get easy and filling breakfasts before school.

I recommend flash freezing the waffles individually so they’ll come out of the freezer bag easier. Then, just reheat in the toaster. Nom nom!!

What to Serve With Fluffy Eggnog Waffles

I love setting up a waffle bar for holiday season breakfasts and brunches. Everyone can eat on their own time and customize their breakfast. (Think hotel breakfast, but way better!)

I usually make the waffles and put them on a big platter for people to take what they want. Alternatively, you can put the waffle maker on the table and let guests make their own.

Alongside the waffles, I like to serve:

  • Butter
  • Maple Syrup
  • Whipped Cream
  • Cinnamon
  • Yogurt
  • Honey
  • Blueberries, strawberries, raspberries
  • Bananas
  • Chocolate and/or Strawberry syrup
  • Scrambled Eggs

Freezer Friendly Leftover Eggnog Waffles

Use up leftover eggnog in these deliciously fluffy waffles. Make a double or quadruple batch and stick some in the freezer, too.

Ingredients

  • 1 3/4 cups all purpose white whole wheat flour {I use freshly ground flour hard white wheat}
  • 1 TBS baking powder {make sure it’s aluminum free!}
  • 1/4 tsp salt
  • 2 eggs {farm fresh, of course}
  • 1 3/4 cups leftover eggnog
  • 1/2 cup Coconut Oil, melted
  • 1 tsp vanilla

Instructions

  1. Heat waffle iron.
  2. Mix dry ingredients in a large bowl and set aside.
  3. Whisk eggnog, eggs, and vanilla. Slowly stir in melted coconut oil.
