lemon tea bread Years ago, I was a hot tea drinker. During the last year or so, though, I have changed into a coffee drinker. I’m not sure how it happened. Tea was my first love. We lived in Japan for 2 1/2 years and you know they drink tea over there…and so did I. When I was pregnant with Baby #1, my midwife recommended all kinds of tea for good health: red raspberry tea for overall feminine health, green tea for antioxidants, other types of tea to relax and soothe my constant nausea, and more tea to help milk production and nursing. I drank quite a lot of tea during and after pregnancies. But during the last year or so, I have shifted to coffee. And honestly, it’s time to get back to tea. I love coffee in moderation, but I’m drinking too much. {My kids say my breath is stinky… and I’ve put on a few pounds, probably because of all the wonderful cream in my coffee.} bigelow tea So I was pretty thrilled when I was chosen to share a bit about Bigelow Tea on SimplifyLiveLove. I didn’t have to look far for tea bags at my house. I might not have been drinking it much in the last few years, but I’m stocked up! I have all kinds of Bigelow tea bags in my cupboards: Sweet Dreams, I Love Lemon, Cozy Chamomile, and Mint Medley. I’ve been in an Eat from the Pantry Challenge this January and drinking that tea aligns with the use-it-up mentality. I was surprised that it all still tastes good as it’s been in my pantry for a long, long time.

2013-01-26 We were at Walmart a few days ago and checked out all the different teas that are for sale now. It’s been a LONG time since I shopped for tea… and I was amazed at all the different types of Bigelow Tea – over 50 varieties – lots of herbal varieties, green tea, black tea, and even Chai, which I looked for but didn’t find, unfortunately. Bigelow is a family owned company and produces over 1 BILLION tea bags a year! I am very impressed with the company’s environmental achievements which they refer to as SustainabiliTea. Clever, eh? Bigelow recently earned a remarkable distinction called Zero Waste to Landfill Certification. This means, Bigelow sends almost no trash to the landfill – over 90% of the waste they produce is recycled or composted instead. I wish I could achieve that at my house!

Bigelow also produces some of their own electricity with 900 solar panels and has reduced gas emissions by consolidating transportation efforts and eliminating truck idling. Impressive!! I really love to hear about companies that take environmentalism seriously. It makes me hopeful for HIS future: daniel tea And HER future:

But anyway…you might be wondering where the heck that Lemon Tea Bread recipe is… and it’s coming! I found this recipe on Epicurious and adapted it slightly, per the reviews. It’s such a nice tart bread and pairs wonderfully with Bigelow Tea! I hope you’ll try it! If you do, please let me know how you like it!

Lemon Tea Bread with #AmericasTea

Ingredients

  • 2 large lemons
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 sticks (3/4 cup) unsalted butter, softened
  • 2 1/2 cups sugar
  • 4 large eggs
  • 1 cup whole milk
  • 1 TBS poppy seeds

Instructions

  1. Preheat oven to 325. Oil and flour 2 bread pans.
  2. Finely grate enough zest from lemons to measure 2 teaspoons and squeeze enough juice to measure about 1/2 cup.
  3. Sift together flour, baking powder, and salt.
  4. Beat together butter, 2 cups sugar, and zest until light and fluffy with a mixer. Add eggs 1 at a time, beating well after each addition. With mixer on low speed add flour mixture and milk alternately in batches, beginning and ending with flour mixture and beating just until batter is combined well. Beat in poppy seeds and 2 tablespoons lemon juice and divide batter between loaf pans, smoothing tops. Bake loaves in middle of oven until a tester comes out clean, about 1 hour {or less if you make mini-loaves}.
  5. While loaves are baking, in a small bowl stir together remaining lemon juice and remaining 1/2 cup sugar until sugar is dissolved.
  6. Cool loaves in pans on a rack 15 minutes. Run a thin knife around edges of pans and invert loaves onto rack. Turn loaves right side up and pierce tops all over with a thin skewer. Repeatedly brush lemon glaze over tops of loaves until all of glaze is absorbed.
  7. Cool loaves completely. Tea bread keeps, wrapped in wax paper, in an airtight container at room temperature 4 days or, wrapped in foil and frozen, 1 month.

moment before bedtime My favorite Bigelow Tea so far is called Sweet Dreams. It’s a mixture of chamomile, hibiscus, peppermint, rose, spearmint, spice, and orange AND it’s caffeine free which means I can drink it at nighttime and still get to sleep. I curled up a little while ago to drink a cup of Sweet Dreams, read some of my favorite cookbooks, and blog. What a sweet moment it is for me when all the littles have gone to bed and I get to enjoy some peace and quiet. I’m getting pretty sleepy and hope to head off to bed soon for my own Sweet Dreams… 😉
