It’s June and time for another meal plan! Here’s another month’s worth of recipe ideas plus seven more 30-minute tasks for filling the freezer! I hope you are enjoying these posts. I know they are really helping me stay on track.

In May I didn’t share a menu plan at all because I just never wrote one! I did well with my April Plan, so we had a lot of food to eat from the freezer in May. I also traveled to Springfield, Missouri and didn’t cook for the week we were gone.  When we were home, I didn’t enjoy not having a plan. Even thought I don’t follow my menu plans exactly every month, they do help keep me on task. I’m glad to make another plan this month as we’re so busy on the ball fields with four kids playing ball, that I need something to work from or we don’t end up eating well at all.

Seven, 30-minute {or there about} tasks for filling the freezer

I’ve got lots of freezer tasks this month! You can pick and choose your favorite, or visit JanuaryFebruary or March, or April Plan to see what else you could do.

1. On the night you have Beef Tacquitos, freeze the extra meat in 2-cup portions.

2. One day in the morning, cook up a big mess of beans to freeze and freeze the extras in 2-cup portions, if you’d like to have the equivalent of canned beans on hand. I freeze mine in larger portions because I always cook more than one can of beans at a time.

3. On the night you have tacos,  cook up a big batch of taco meat and freeze the extras!

4. On the night you eat Broccoli & Cheese Twice Baked Potatoes , go ahead and bake the entire 5 lb bag of potatoes! Frozen Twice Baked Potatoes make a nice vegetarian meal if served with other veggies and a salad, or they could be used as a meal component too!

5. Cook up a huge batch of waffles the day you eat them and freeze the extra. To eat, just pop them in the freezer and enjoy. I finally got a new waffle maker and am back to making waffles regularly. My kids LOVE them!

6. My Spinach Mozzarella Meatloaf freezes very well. I quadruple the recipe and freeze the rest. I made this in March and we are out. I love having this meatloaf in my freezer, so I’m making more in June.

7. Also make up extra packets of muffin mixes. It really does cut out a lot of time when you only have to pull a packet out of the freezer instead of gathering all ingredients and measuring and mixing.  I plan to make up 4-5 extra Mix and Match Muffin packets as well.

  1. Hi Michelle! Thanks for the shout out! I like your approach to freezer cooking. Too much at once is overwhelming I think.

  2. I have tried a meal plan several time, but it never works out. I love to cook and I am always finding new recipes to try or think of something else I want to cook. I am terrible about following a plan. I really need to work harder about following one.
