Taco night is a favorite meal at our house. We love ground beef tacos, spicy salmon tacos, taco soup, taco pizza, taco pasta – we just love tacos! This pineapple salsa is a great addition to every taco night, and it goes well with grilled chicken, fish, or pork too!

Why make pineapple salsa when you can buy it in the store?

Well, I can make this pineapple salsa in about 10 minutes. It tastes fresher and it doesn’t have any preservatives or chemicals. Plus it’s cheaper than buying the store bought stuff (especially if you buy pineapples when they’re on sale).

Ingredients for Delicious Pineapple Salsa

Late summer is the best time to make this pineapple salsa, because the ingredients will be freshest then. Hawaiian pineapples are in season from April through September. The rest of the ingredients are usually fresh in my garden starting in July. However, you can make it any time of year you want! Whenever we find pineapples on sale, I grab one for this recipe.

You will only need a few ingredients to make this salsa – a pineapple, cilantro, peppers, onions, lime juice, and salt. That’s it!

It’s best to make this salsa at least two hours ahead of time to give the flavors time to meld together nicely.

  • 1 cup pineapple, diced
  • 1 tomato, chopped
  • 1 red bell pepper, chopped
  • ¼ red onion, chopped
  • ¼ cup cilantro, minced
  • 1 serrano or jalapeño pepper, finely minced (optional)
  • juice of 2 limes
  • Redmonds REAL salt to taste

How long does pineapple salsa last in the fridge?

I make a batch of fresh pineapple salsa and use it for the next few days. Fresh pineapple salsa can last in the fridge for 3-4 days when stored in an airtight container.

This pineapple salsa recipe is best made with fresh pineapples. However, you can use canned pineapple in a pinch. Just make sure to drain the liquid from the can really, really well before adding pineapple to your salsa.

How to Cut a Fresh Pineapple

The trickiest part of this recipe is probably cutting the fresh pineapple. It looks more intimidating than it is. To prepare and chop your pineapple:

Some people prefer to cut the skin off of the pineapple first. However, I start by slicing off both ends of the pineapple. Then I cut the pineapple into four wedges. 

Next, I remove the pineapple from the skin by running a knife between the fruit and the skin. This leaves me with four wedges of pineapple. Cut the core off each wedge, and dice up the pineapple into small pieces. Easy peasy!

If you prefer, you can also peel the pineapple first and then slice it into fourths, core, and dice.

Recipe Tip

Make sure to use gloves when cutting serrano or jalapeño peppers. If you want your recipe to be spicy, leave the seeds when cutting the peepers. To make your salsa milder, remove some or allthe seeds before slicing or mincing the serrano/jalapeño peppers.
