Frozen Strawberry Yogurt Cupcakes Recipe - a quick and easy, two ingredient treat recipe your kids will love. Easy enough for any day, but pretty enough to serve to guests too!

My blogging buddy, Ally, from Ally’s Sweet & Savory Eats, is due any day now with Baby #3 – a little girl we’re told! Ally actually lives in my own little town and I get the pleasure of seeing her in real life from time to time. To honor her and her new baby, a few of my Iowa blogging buddies decided to host a virtual baby shower in Ally’s honor, and these Frozen Strawberry Yogurt Cupcakes are my offering!

To make this delicious treat, all you need are two ingredients: yogurt and fruit! A blender, cute cupcake papers, and a freezer – and voila –

Even if you’re not expecting a new baby, these frozen treats are a fabulously quick and easy snack. My own kiddos absolutely adore them, and they are so easy to make that I think they’ll be a healthy snack staple at our house this summer.

If you get the right yogurt and fruit, you can rest assured that no artificial food colors, aspartame, or other unwanted ingredients will be pumped into the body. These nice treats are perfect for hot summer days when you need a quick and healthy pick me up.

Ingredients

  • 32 ounces yogurt - I prefer full fat, organic, vanilla. You could also use plain yogurt, but in that case, I would add a couple TBSP honey to sweeten.
  • 1 pound fresh fruit - strawberries are divine. Another of type of fruit would also be wonderful - or come up with your own combo!

Instructions

  1. To make, simply add yogurt to a blender and blend until smooth.
  2. Pour out into 12 cupcake papers.
  3. Freeze for at least two hours, or preferably overnight.
  4. The trickiest part is removing the cupcakes from the muffin tin. Once they're out, either eat them, or bag them up and save them for another day.
  5. Enjoy!

  1. Hey! FINALLY got around to making these and all involved loved them. Plus it used up the last (sadly) of our strawberries from the garden. I needed to use up some things so we also added blueberries and some kiwi on the top. Super yummy. Thanks again!
