If you’re a gardener, chances are you may have summer produce coming out your ears! Tis the season for zucchini, squash, cucumbers, broccoli, cauliflower, kale, and cabbage! And tomatoes and corn aren’t far behind!!
Here is round-up of 10 Summer Produce Recipes
Waste not, want not!
Italian Zucchini Pie?!! If you have too much zucchini, this recipe will help you put it to good use! It’s gotten rave reviews from almost everyone who has tried it.
German Cucumber Salad – one of my favorite ways to use up cucumbers when there aren’t enough to pickle. This German cucumber salad is tasty, tasty, tasty.
Bacon, Kale, & Tomato Salad – A salad my sister created to use up the zillion pounds of kale I had last year! Bacon makes everything better and this salad is proof that even kale can be delicious with enough bacon. 🙂
Green Beans with Garlic and Toasted Almonds – One of my favorite ways to prepare green beans. These are also great as foil packets cooked over the grill. Delicious!
Fried Squash Puffs – If you’ve never tried these, you should! I’m not a huge fan of yellow squash, but fried squash puffs are quite tasty!
Easy Homemade Roasted Tomato Sauce– This is perhaps the most delicious and easy tomato sauce you can make from scratch! It freezes well and is such a great thing to pull out of the freezer in the middle of the winter.
Hobo Carrots – great for the grill! These carrots are another delicious side dish – perfect also for healthy camping food too.
Cowboy Caviar – This is a really delicious treat! We love this easy side dish as a side dish and a salsa both.
Sauteed Cauliflower – a very delicious way to eat your cauliflower! If you can grow cauliflower in your garden, here’s our favorite way too cook it.
No-Mayo Cole Slaw – This is a great recipe for picnics and outdoor eating! The best thing about this cole-slaw is that you don’t have to worry about it spoiling if you take to picnics or BBQs. We love the tangy goodness of this recipe.
