I first got the inspiration for Parmesan Garlic Chicken in one of my favorite cookbooks Don’t Panic–More Dinner’s in the Freezer: A Second Helping of Tasty Meals You Can Make Ahead. I really like this cookbook not only because there are very tasty, freezer friendly recipes included in it, but it also calculates the amounts necessary if you were to make the recipe time x3, x6, or x9 for freezer meals. I’ve been making a quick and easy one pot meal at least once a week this summer. It’s a versatile recipe and it changes a little bit each time I make it. Scalloped Potatoes and Bacon for Slow Cookers

I’ve been giving my crockpot a workout the last couple of weeks. It’s helping me a lot to get dinner on the table at an earlier time. Honestly, we usually eat kind of late – around 7 pm, but with 3 kids in an assortment of sports, activities, and practices, it’s really important that I feed my family earlier right now.
