Weekly Menu / Freezer Cooking Plan ~ 6/4 ~ Kale Edition

As you might be able to tell from my picture, the theme for this week’s menu is K.A.L.E. I have a ton of lovely kale in my garden that I do not want to waste so I’m trying to figure out how to incorporate it into all aspects of my menu this week.

Breakfasts ~

  • Blueberry Scones (extra mixes for the freezer)
  • German Pancakes w/ Buttermilk Syrup
  • Egg Sandwiches
  • Cold Cereal
  • Yogurt Parfait
  • Smoothies (yogurt, berries, & kale) & Toast

Standard Fair Lunches ~

  • Bean Burritos on Homemade Tortillas (extra tortilla dough)
  • Salads w. Hard Boiled Eggs
  • Sandwiches (PB & J, Grilled Cheese w. Kale), Kale Chips
  • Nachos
  • Leftovers

Dinners ~

Happy Memorial Day and THANK YOU to all who have served in our American Armed Forces, including my Grandfather, Father, and Hubby.

We finally gave up on Saturday and turned on our AC. I could have probably dealt with the heat a little longer, but my hubs gets so frustrated when it’s hot and humid in our house. I’m not going to argue with him – but I do try to keep the thermostat up in the mid 70s to help keep the costs down. So I’m going to try to use our slow cooker and avoid turning on the oven much – although I still have to bake bread and granola.

Here’s my plan:

Breakfasts ~

  • Eggs & Sauteed Potatoes
  • Pancakes & Buttermilk Syrup
  • Waffles (extra for the freezer)
  • Cold Cereal
  • Yogurt, Berries, & Granola
  • Toast & Smoothies

Lunches ~ Standard fair around here:

  • Sandwiches, Veggies & ranch, fruit
  • Hard boiled eggs &

We had a great visit with a wonderful friend last week and I was sad to see her go today. Everything was so much easier and much more fun with another mom – even with an extra 3 kiddos. Maybe the sister-wife thing wouldn’t be so bad after all… 😉

I have a lot of food left over from her visit even though we ate like crazy, so this week’s menu shouldn’t be too hard. Here’s my plan:
