Salmon Street Tacos Approved by 5/6 of My Family

I’m always looking for ways to incorporate more heart healthy salmon into my family’s diet, and this recipe for salmon street tacos is approved by five out of six of us. My middle daughter, Cora, has proven to be my pickiest eater and claims she doesn’t like salmon (or anything healthy really). Honestly, I think she just won’t give it a chance. But as long as I serve it with beans, she’ll add a tiny bit of salmon to her bean burrito in an attempt to make me happy.

The rest of the family, however, thinks these salmon street tacos are delicious! These tacos are a great way to stretch salmon and are so qiuck to make. Check out the recipe below.

How to Make Salmon Street Tacos

The really great thing about this meal is that not only is it delicious, but it’s also quick to make. Seriously, in the ten minutes it takes to cook the salmon, you can have the red cabbage slaw and the lime cream sauce finished for a complete meal. It’s possible to make everything ahead of time for a quick reheat at dinner time too and the slaw actually tastes better if you give it time to absorb the flavors!

So let’s get started, shall we?

Saute the salmon in butter over medium high heat

Melt butter in your favorite skillet over medium high heat. Cover salmon with blackened seasoning mix (you can make your own with my recipe here) – only one side if the skin is still on the bottom of the fish. Place salmon skin side down in melted butter and saute for 5 minutes. Flip salmon and saute for 5 more minutes. If you want, remove the skin after you flip it and add more blackened seasoning. Remove salmon from pan, allow to cool for a few minutes, then shred with a fork and set aside.

While the fish is cooking, combine all ingredients to make the red cabbage slaw. Place the slaw in the fridge to let the ingredients mingle.

Last, make the lime cream sauce by simply combining all ingredients. If you don’t have one of these microplanes, you need one! It makes zesting citrus and grating hard cheeses a snap! Place cream sauce in the fridge so its flavors can come together too.

Ingredients

    Salmon
  • 1 lb wild caught Alaska salmon
  • 3-4 TBS blackened seasoning mix
  • 2 TBS butter
  • Red Cabbage Slaw
  • 1/2 head small red cabbage, finely chopped
  • 1/4 cup cilantro, chopped
  • 3/4 cup thinly sliced red onion
  • 1 1/2 TBS fresh lime juice
  • 1 TBS EVOO
  • finely chopped jalapeno, to taste
  • 1/2 - 1 tsp REAL Salt
  • Lime Cream Sauce
  • 1/2 cup sour cream
  • 1/2 tsp finely grated lime zest
  • 2 tsp fresh lime juice

Instructions

Especially since I have YET to harvest a single ripe tomato. It’s true! 🙁 But I have harvested a nice crop of garlic, potatoes, peppers, and herbs, so from that harvest, this dish was created – and it is DELISH! Busy Week Night Greek Salmon Sheet Pan Dinner

I’ve been incorporating a lot more salmon recipes into our diet because of all the health benefits! The other day after staring at all of the potatoes in my kitchen (I grow a lot of potatoes!) and wondered what to do with them. I thought about the Greek Chicken Sheet Pan Meal recipe I shared a while back and decided to try one with salmon. Hence, busy week night Greek Salmon Sheet Pan Dinner was born. And it is a keeper!  🙂salmon sheet pan dinnerI love sheet pan meals because they come together pretty quickly and my family seems to enjoy them. After one small prep I can have an all inclusive meal on the table with little effort. The cooking time on this sheet pan meal is a little longer because the potatoes take longer to cook than the salmon. Even so, it’s still pretty easy to put this sheet pan meal on your table.

Here’s how to make this delicious Greek Salmon Sheet Pan Dinner!

Pre-heat oven to 425 and prep potatoes and onions by slicing. Combine them in a bowl with 1/4 cup olive oil, salt and pepper, and then spread them on a sheet pan. Bake for 25 minutes.

Add salmon and other veggies to sheet panAdd the salmon and other veggies, top with crushing garlic and remaining olive oil from potatoes. Bake for 8 more minutes. By the way, not all salmon is created equally. If possible, buy wild caught salmon (preferably Alaska sock-eye) over farm raised salmon. Wild caught salmon has a better fat ratio, fewer contaminants, and more nutrients.

Ingredients

  • 1 lb wild caught Salmon
  • 2 lb baby potatoes, halved or quarterd
  • 1 onion, sliced into wedges
  • 1/4 cup olive oil
  • salt and pepper to taste
  • 2 garlic cloves, sliced
  • 1 lemon, sliced
  • 4 small peppers
  • 2 TBS fresh oregano, sliced
  • 1/2 cup cherry tomatoes
  • 1/4 - 1/2 cup feta cheese
  • juice of 1 lemon

Instructions

  1. Preheat oven to 425. Combine potatoes, sliced garlic, onions, olive oil, salt and pepper until the veggies are coated.
  2. Put the veggies on a sheet pan and bake for 20-25 minutes.
  3. Move the veggies to the side and add the salmon, peppers, sliced lemon, and oregano. Pour any remaining olive oil from the potatoes on the salmon and top with crushed garlic. Bake 8 minutes.
  4. Add tomatoes, feta cheese, and top everything with the juice of one lemon. Bake 5 more minutes.
  5. Enjoy!

We just returned from our family springbreak vacation in Europe and I realized a couple things while we were gone. First, my body feels better than it has in a long time. I drank very little red wine while we were gone (something I did almost every night without fail before we left). I had been having quite a few headaches before we went to Germany and suspected it may be the wine.

While we were gone, I only drank wine on three separate evenings, and each morning afterwords, the headaches were back. Hmmm. Second, my joint pain (my hips and shoulders have hurt me for years!) was a lot better while we were gone which I attribute to an overall cleaner European food system. They don’t allow a lot of the additives we find in our American food. Hmmm.

That information has been swirling in my head and I’ve also been watching friends participate in lots of clean eating challenges, like the Whole 30 program. Now I’m not quite ready to jump on board with the Whole 30 thing just yet (I REALLY love yogurt and cheese), but I have been cleaning up our food which seems to have deteriorated recently.

To make this quick and easy meal, simply preheat your oven to 450 degrees. Blanch a pound of asparagus for four minutes, then arrange all ingredients on a sheet pan. Bake for 12-15 minutes and enjoy!

Ingredients

  • 4, 6-8 ounce salmon fillets, preferably wild-caught Alaskan Sockeye Salmon
  • 1 lb fresh asparagus, washed and trimmed
  • a handful of cherry tomatoes, washed and halved
  • 1 lemon, half juiced, half sliced
  • 3 TBS avocado oil
  • 1 TBS Barlean's Forti-Flax ground flaxseed
  • REAL salt & pepper to taste

Instructions

  1. Preheat oven to 450. Blanch asparagus for 4 minutes in boiling water.
  2. Arrange salmon and veggies on a sheet pan (lined with unbleached parchment paper if you want super easy clean-up. Skip this step if you're cheap like me.)
  3. Drizzle avocado oil and lemon juice over fish and veggies.
  4. Top with ground flaxseed, salt, pepper, and lemon slices.
  5. Bake for 12-15 minutes, or until salmon is cooked to your heart's desire.
  6. Enjoy!

This recipe feeds my family of 6, but two of my kids aren't huge salmon fans.
