Weekly Menu / Freezer Cooking Plan 1/6/2013

Last week, I posted my entire menu for the month of January – the 18 days that I have to cook, that is. 😉 I have been working hard at using up my vast food stores – mostly from my freezer but also from my pantry. My week didn’t go quite as planned, but we did not eat out {except lunch with our homeschool group on Friday} and I made good progress getting food out of my freezer. I have to say, I have been quite the stinker this weekend about cleaning out the leftovers in the fridge, too, and I LOVE that we are getting through them all.

weekly menu Last night, I baked this fabulous blue cornbread with cornmeal I ground myself from corn I grew last summer. How awesome is that??? I keep thinking about The Little Red Hen. Hehe! But I did share it and I did have help making it. It was easily THE. BEST. CORNBREAD. I have ever had, and the recipe is here.

Now though, it’s time for me to revisit my menu plan and think about what I will cook this week.

Here’s what we’ll eat for dinner:

  • Chili Dogs with Homemade Chili {extra chili for the freezer}
  • Philly Cheesesteak Sandwiches and Oven Fries
  • Chicken in the Crock Pot with Rice & Gravy
  • Pioneer Woman

    • Thanks, Alicia! It was a lot of fun - the first year I grew corn on my own. Usually my father-in-law takes care of the corn. This year I plan to grow all kinds of cool ornamental corn and also some edible varieties, too!
