Weekly Menu / Freezer Cooking Plan ~ 8/27

Whew! I’m so glad to have survived last week. It was a big week. We sent Anna off to public school and slowly started easing back into homeschooling. Our little town had their annual Founder’s Day Weekend {put on by the Chamber of Commerce, something my hubs is very active in}, AND it was my hubs’ 20th high school reunion – part of which was hosted at our barn. To top it off, a BOX FAN fell on my face and crushed my nose and gave me blackish circles under both eyes. Really, it’s true. I’m just so clumsy… 😉 Frustrating and painful, to say the least.

Simple Menu Plan For Your Week

So, my simple menu plan from last week came in REALLY HANDY! And I’m looking to duplicate it this week. We’re getting our house ready to list! Big news!! Just another necessary step so we can build our passive house out by our barn and get out to the country once and for all. I’ve been slowly plugging away at de-cluttering, but I still have to finish the basement and our front porch. No small tasks. And my garden was ignored last week, so I really have to get out there and I’m sure after I’m finished picking I’ll have tomatoes to can and broccoli to freeze. I’m getting tired just thinking about all of this work! 😉

So, here’s my menu plan, maximizing my freezer contents:

Breakfasts ~

We’ll have any combo of

  • cold cereal
  • smoothies & toast
  • eggy breakfast muffins from the freezer
  • apricot scones {from a freezer packet}

Lunches ~

  • Pasta Salad
  • Tuna & Crackers
  • Roast Beef Sandwiches
  • PB & J
  • Hummus & Veggies
  • Breakfast Burritos from my freezer

Dinners ~

  • Easy, Homemade Pizza {dough from my freezer – recipe coming}
  •  from my Freezer Meal Exchange
  • Breakfast for Supper – homemade hashbrowns, Fajitaspancakes & sausage
  • Crockpot Beans & Homemade Tortillas {extra tortilla dough for the freezer}
  • Taco Soup {made with extra crockpot beans} & Corn Bread
  • Pan Fried Chicken & veggies from my garden
  • Chicken & Rice Casserole {with left over chicken & broccoli from my garden}
