Weekly Menu / Freezer Cooking Plan 3/12



From my kitchen last week:

Artisan bread made from freshly ground flour
Pineapple, orange, kiwi, spinach smoothie
Chef salad – egg, avocado, feta, carrot, sunflower seeds on organic spring salad mix

This week is a crazy week for me – I’m writing several posts in honor of Hip Baby Awareness Week, my Comp I class ends today, grade are due Friday, and two more Comp classes start on Wednesday. Whoever makes the schedule for my community college out to be shot, in my humble opinion. That’s too much going on in ONE week and why shouldn’t online students and staff have spring break???! Don’t get me started.

Anyhow, simplicity is the name of the game this week, and I probably won’t do much freezer cooking. Here’s what we’re eating:

Breakfasts ~

  • Eggs & Sausage
  • Eggs & Bison Bacon (something I have never tried before)
  • Cereal
  • Yogurt, fruit, homemade granola
  • Pancakes
  • Smoothies

Lunches ~

  • Beans & Cornbread
  • Bean Burritos
  • PB & J sandwiches
  • PB & Banana sandwiches
  • Leftovers

Dinners ~

  • Grilled chicken, salad, veggies
  • Veggie Fajitas on homemade flour tortillas, beans, guacamole
  • Homemade pizza, salad
  • Ground Beef Stroganoff from the freezer
  • Crockpot Roast with potatoes, carrots & onions
  • Chicken & Rice Stoup, crusty bread
  • Leftovers
