Weekly Menu / Freezer Cooking Plan ~ 7/23

July is almost over already. This summer is flying by! The kids and I are headed to my parents’ house on Sunday. My two oldest kids are going to a week long fine arts camp at the college I teach at, called Camp Blue Sky. They went last year and really enjoyed themselves. I can’t wait to see what they create this year!

We’re still eating a lot from my garden. I’ve got yellow squash and a couple of zucchinis – it looks like the squash bugs are working hard to kill those plants though. Can’t say I’m too disappointed…My tomatoes are so loaded I can’t believe it. I picked all of my red onions and am pleased with how they turned out! We’ve also been picking a few cherry tomatoes here and there, but when those things start turning red, we are going to be eating tomatoes all day long, every day for a long time! And my cabbages are about ready to pick too

Here’s what we’re eating this week:

Breakfasts ~

  • Banana Muffins
  • Blueberry Crumb Cake
  • German Pancakes
  • Eggs & Bacon
  • Yogurt & Berries
  • Smoothies & Toast

Lunches ~

  • Leftovers
  • Homemade Cheesy Noodles
  • Hard Boiled Eggs, Salad, Veggies
  • Egg Salad Sandwiches
  • Beans & Rice

Dinners ~

  • Chicken Lasagna {from my freezer meal exchange}
  • Tacos {extra meat for the freezer}
  • BBQ Pork in the Crockpot
  • Chicken Broccoli Rice Casserole {extra for the freezer}
  • Pizza
  • Stir Fry {cabbage is ready in my garden!}
