Ugh. I haven’t been feeling well since last Friday and so cooking is the last thing that’s on my mind. Unfortunately, with 5 hungry people to feed, I guess I’d better get my meal plan on – good thing I have food in the freezer to tide us over. I’ve harvested all of my onions and potatoes and had quite a harvest! I haven’t weighed the onions yet, but there are 200 pounds of potatoes we need to eat up this winter.
So my weekly menu / freezer cooking plan will focus on creative ways to incorporate onions and potatoes into as many meals as possible.
Breakfasts ~
- Yogurt, fruit, homemade granola
- Breakfast Burritos for the freezer {I made a few last week, but want to make more to add to the stash}
- Eggs & Sausage
- Egg McMuffins {extra for the freezer}
Lunches ~
- Leftovers
- Sandwiches
- Bean Burritos
Dinners ~
- Spinach Mozzarella Meatloaf {from freezer}
- Chicken Ranch Tacos for the Slow Cooker {extra for the freezer}
- Cilantro Lime Chicken for the Slow Cooker {extra for the freezer}
- German Zwiebel Kuchen (onion cake) {extra for freezer}
- Warm Fingerling and Tuna Salad {I’ve got 200 pounds of potatoes to eat up…}
- Pot Roast in the Slow Cooker
- Homemade Pizza
