Weekly Menu / Freezer Cooking Plan ~ Jan 9

Jan 9 marks the start of the second week of the eat from the pantry and no spend challenges we are participating in. Week 1 was a pretty good success and I’m hopeful week 2 will be as well. I’m also determined to link up to Food Waste Friday with a photo of my, gulp, food waste! I figure that will be good motivation a) to try not to waste any food. And b) to clean out my fridge!

A few of the meals we ate last week:
I actually did a respectable job at sticking to last week’s menu – something I can’t claim every week! It felt pretty nice to have meat thawed out ahead of time and {most} ingredients necessary to make successful meals. I did have to improvise a couple of times but I also used up some ingredients that I might not have otherwise used! SCORE!

With all that in mind, here’s what I’m thinking this week:

  • PB & J Sandwiches
  • Leftovers
  • Salad
  • Egg Salad Sandwiches
  • Grilled Cheese
  • Bean Burritos

  1. We're in on the pantry challenge too - congrats for staying on track! I managed to use up some leftovers pretty creatively this week so I'm feeling good for this week coming up!
  2. I too think the chicken pot pie looks amazing! I love the little pastry hearts on top. Perfect for a Valentines Day family dinner. Gosh I always forget about egg sandwiches. I grew up eating those... I just made some Oatmeal Molasses Bread that is just begging to be turned into an Egg Sandwich. Can't wait to see that food waste picture on Friday! Is it vegetable scraps and everything? Or just a whole bunch of mint that doesn't get used?
  3. I'm looking forward to the chicken pot pie recipe! it looks awesome! I would love to see your macho nacho and no-mayo cole slaw recipes too! :)
  4. That chicken pot pie looks delish! I think I have the same Pampered Chef stoneware! I have some salmon patties in the freezer that are getting a wee bit old. Maybe I'll try grilling them. Honey and soy sound like a good mix, though I'm not supposed to be eating sugar. :(
  5. Loaded nachos sound sooo good. I'm at work right now and I would love it if someone would walk right through that door with a TRAY of them, all for me! :)
