Cook noodles according to package directions. Drain and set aside.
Combine sauce ingredients and whisk well. Set aside.
Prepare all veggies - it's fine to mix the stir fry veggies, but keep the green onions separate.
Add more sesame oil and stir fry all the veggies, the garlic, ginger, and green onion whites until cooked through - batch cook if necessary and rmove veggies to a big bowl.
Finally, stir fry the cooked noodles with the sauce quicky, mix everything together and serve!
Garnish with green onions, as desired and ENJOY!
