Farm to Table: Roasted Vegetables w/ Fresh Herbs & Kielbasa

- 10-12 cups prepared vegetables: potatoes broccoli, carrots, onion, peppers, zucchini if you want {but note that the zucchini gets a little watery}.
- 4 TBS olive oil
- 4 cloves garlic smashed
- Couple springs fresh thyme & oregano
- Salt & pepper to taste
- 5-6 links good quality kielbasa cut into 3 or 4 pieces each
Preheat oven to 425. Add prepared veggies to a lidded braiser.
Whisk 4 cloves crushed garlic to 4 TBS good quality olive oil and dump over veggies.
Add kielbasa, fresh herbs, and salt and pepper.
Cover and bake for 45-50 minutes.
Serve with spicy mustard and enjoy!
