Farm to Table: Roasted Vegetables w/ Fresh Herbs & Kielbasa

Ingredients

  • 10-12 cups prepared vegetables: potatoes broccoli, carrots, onion, peppers, zucchini if you want {but note that the zucchini gets a little watery}.
  • 4 TBS olive oil
  • 4 cloves garlic smashed
  • Couple springs fresh thyme & oregano
  • Salt & pepper to taste
  • 5-6 links good quality kielbasa cut into 3 or 4 pieces each

Instructions

  • Preheat oven to 425. Add prepared veggies to a lidded braiser.
  • Whisk 4 cloves crushed garlic to 4 TBS good quality olive oil and dump over veggies.
  • Add kielbasa, fresh herbs, and salt and pepper.
  • Cover and bake for 45-50 minutes.
  • Serve with spicy mustard and enjoy!
