Mediterranean Tomato Salad

Ingredients

For the Salad

  • 4 cups garden grown assorted tomatoes, cut into bite sized pieces
  • 1-2 seeded & sliced banana peppers {optional if you'd like a little spiciness}
  • 1 seeded & sliced sweet pepper
  • 1/4 cup red onion sliced thin
  • 1/2 cup pitted kalamata olives
  • 1/2 cup good quality feta cheese crumbled {preferably cheese that has been stored in liquid}

Salad Dressing

  • 1/4 cup good quality extra virgin olive oil
  • 1/8 cup balsamic vinegar
  • 1 tsp Real salt
  • 1/4 tsp freshly ground black pepper
  • 2 TBS fresh basil cut in ribbons

Instructions

  • Combine olive oil, vinegar, salt and pepper, and either shake to combine in a lidded jar, or whisk in a bowl. Set aside.
  • Combine tomatoes, peppers, onions, olives, and feta cheese and stir gently to combine.
  • Drizzle dressing over salad and top with basil ribbons.
  • Enjoy!
