One of my Favorite Mediterranean Recipes - Yummy Greek Chicken

A delicious main dish recipe made with chicken, olives, and feta cheese - sure to be a crowd pleaser at a dinner party or family dinner.

Ingredients

Chicken

  • 2 large chicken breasts
  • 1 TBS butter
  • 1 TBS olive oil
  • 1 small red onion finely chopped
  • 2 cloves garlic smashed
  • 1 tsp oregano
  • salt & pepper to taste

Toppings

Instructions

  • Flatten chicken breasts using the flat side of a mallet. Cut breasts into smaller portion sizes, if desired.
  • Heat butter and olive oil over medium heat.
  • Add onions and garlic and cook several minutes, until garlic is golden and onions are translucent and fragrant.
  • Place chicken on top of garlic and onions. Top with half the oregano, salt & pepper to taste and let cook for 6-8 minutes.
  • Turn chicken and add remaining oregano, and more salt & pepper. Cook 5-6 minutes longer, or until chicken has reached a safe internal temperature of 165 degrees.
  • Remove from heat and top with olives, feta cheese, and tomatoes.
  • Add more salt, pepper, and oregano if desired.
  • Enjoy!
