One of my Favorite Mediterranean Recipes - Yummy Greek Chicken
A delicious main dish recipe made with chicken, olives, and feta cheese - sure to be a crowd pleaser at a dinner party or family dinner.

Chicken
- 2 large chicken breasts
- 1 TBS butter
- 1 TBS olive oil
- 1 small red onion finely chopped
- 2 cloves garlic smashed
- 1 tsp oregano
- salt & pepper to taste
Flatten chicken breasts using the flat side of a mallet. Cut breasts into smaller portion sizes, if desired.
Heat butter and olive oil over medium heat.
Add onions and garlic and cook several minutes, until garlic is golden and onions are translucent and fragrant.
Place chicken on top of garlic and onions. Top with half the oregano, salt & pepper to taste and let cook for 6-8 minutes.
Turn chicken and add remaining oregano, and more salt & pepper. Cook 5-6 minutes longer, or until chicken has reached a safe internal temperature of 165 degrees.
Remove from heat and top with olives, feta cheese, and tomatoes.
Add more salt, pepper, and oregano if desired.
