Trail Mix Popcorn with Dried Berries, Nuts & Chocolate

Ingredients

  • 1/3 cup popcorn kernels
  • 1 tbs coconut oil {I used Coconut Infusions with butter flavor}
  • 1 cup cashews
  • 2 cups dried fruit {I used cranberries cherries, and blueberries}
  • 2/3 cup chocolate chip
  • sea salt

Instructions

  • Pop popcorn in coconut oil and then put the popcorn on a sheet pan or parchment paper.
  • Sprinkle the nuts and dried fruit on the popcorn.
  • Melt the chocolate chips in a double boiler.
  • Sprinkle with sea salt to taste.
  • Let the chocolate harden.
  • Enjoy!
