  • Heat the EVOO over medium heat in a small pan.
  • Add garlic and onion and saute 3-4 minutes, or until clear.
  • Add mushrooms and kale and saute a few more minutes.
  • Meanwhile, heat a griddle over medium high heat and add a heat amount of EVOO. Add a tortilla, 2-3 TBS spaghetti sauce, whatever toppings you want, cheese, and top with another tortilla. Flip after 2 minutes. Let cook another 2 minutes. Flip until done.
  • Enjoy!
