Easy Pizzadilla Recipe – Kid Friendly Dinner on the Double

I do 99% of the cooking in our family. And the grocery shopping, and the planning, and the cleaning, etc. If it deals with food, it’s my decision. However, when my husband and I first married waaaay back in 1997 {I was a reeeeaaaallllllllly young bride, LOL!} , he had one homemade meal in his cooking lineup – the pizzadilla. He made it for me a few times when we first married, and then I kind of forgot about it. But after we had kids, his easy pizzadilla recipe made a comeback and not only is it a huge hit with the kids, it’s also a great go-to recipe for busy nights. It’s easy to get on the table in about 15 minutes, if you keep a stocked pantry!!
Here’s Dan’s original Pizzadilla idea PLUS my version of the adult-friendly pizzadilla, too. I know you’ll like this easy meal idea when you need a go- to AND kid friendly meal on the table in a hurry!
Easy Pizzadilla Recipe – Kid Friendly Dinner on the Double
Easy Pizzadilla Recipe โ Kid Friendly Dinner on the Double
Ingredients
- 1 TBS extra virgin olive oil {preferably organic}
- 1 shallot, chopped fine
- 1 large garlic clove {smashed}
- small handful fresh mushrooms, chopped fine {seriously, omit if you don't like mushrooms!}
- couple leaves of fresh kale, chopped fine
- 1 - 2 cups mozzarella cheese, grated
- pepperoni or other protein {if desired}
- Half a jar favorite spaghetti sauce I used Bertolli Riserva Sauce Porcini with White Oil and my kids didn't even know they were eating mushrooms!. It was oh-so good!
- 10 tortillas
Instructions
- Heat the EVOO over medium heat in a small pan.
- Add garlic and onion and saute 3-4 minutes, or until clear.
- Add mushrooms and kale and saute a few more minutes.
- Meanwhile, heat a griddle over medium high heat and add a heat amount of EVOO. Add a tortilla, 2-3 TBS spaghetti sauce, whatever toppings you want, cheese, and top with another tortilla. Flip after 2 minutes. Let cook another 2 minutes. Flip until done.
