Ingredients
1tablespoonolive oil
1/2oniondiced
2-3clovesgarliccrushed
2cupschicken stock
2cupscookedchopped chicken
3cupsfrozen mixed vegetableslike frozen peas, carrots, and green beans (you can also use 3 cups of fresh, uncooked vegetables - diced potato, carrot, green beans etc)
3tablespoonsbutter
2tablespoonsflour
1/2cupmilk
1bag frozen tater totsregular or mini size
Salt & pepper to taste
Instructions
Preheat the oven to 400 degrees and prepare a 9x13” baking dish by spraying non-stick cooking spray, or running a butter wrapper over the dish.
Heat olive oil in large saucepan over medium high heat. Add onion and saute for 2-3 minutes. Then add garlic and saute for a 1-2 more minutes.
Add the chicken stock and continue to cook over medium high heat. If using fresh, non-frozen vegetables, cook the prepared vegetables in the chicken stock for 6-8 minutes. If using frozen vegetables, don’t add them yet!
Prepare the roux by melting butter in a small saucepan over medium heat. Whisk flour into the butter and add milk. Whisk until the filling is bubbly and thickened - about one to two minutes.
Pour the roux into the heated chicken stock. Stir until combined. Add the chopped chicken and frozen vegetables (if using frozen veg instead of fresh). Stir again until combined then removed from heat.
Add salt and pepper to taste. This will likely depend on how salty your chicken stock is. I use homemade chicken stock and generally add about ¾ teaspoons salt and ½ teaspoon pepper.
Pour the chicken pot pie mix into the prepared 9x13” dish. Then, top with tater tots. Bake 25-30 minutes or until brown and bubbly.
Notes
Note, you can omit the onion and garlic if you want. I think it adds a nice touch, so I include. But if your kids are anti-onion, just omit that first step and start with heating the chicken stock.
