Comfort food from scratch is always a big hit in my house, and I like the recipe even better when itโ€™s freezer friendly. I love this chicken pot pie tater tot casserole recipe because itโ€™s a great way to use up leftover chicken and I donโ€™t have to make pie crusts. Itโ€™s basically comfort food without the fuss and itโ€™s a big hit with my family!


Another reason to love this recipe is because of its versatility. You can make this tater tot casserole as easy or complicated as you like. Sometimes I use fresh vegetables, following along my more traditional turkey pot pie recipe, and sometimes I use a bag of frozen vegetables. It all depends on whatโ€™s in my fridge or freezer and how much time I have. 

What type of tater tots should I use?

Frozen tater tots work great in this recipe. You can use regular sized tots or mini-tots if  you prefer. The recipe calls for a bag of tater tots, but you probably wonโ€™t use them all.

The key is to get nice and crispy tater tots, regardless of which type you use!

Can I freeze this tater tot casserole recipe?

Doubling a recipe and making one extra is a great way to get a from scratch dinner served on busy evenings. I highly recommend doubling this recipe and making one extra for your freezer. 


The best way to freeze this casserole is to prepare the chicken pot pie filling recipe and freeze it in a 9×13 pan. To cook, place the frozen casserole in the fridge to thaw the day before you want to serve it. Top the thawed casserole with tater tots and bake per instructions.


You can also bake it frozen, if you have that oh-crap-whatโ€™s-for-dinner moment at 5 pm that I so often have. Remove from the freezer 30 minutes before cooking and preheat the oven to 350F. Bake  for 45 minutes without the tater tots, then add the tater tots and bake for an additional 45 minutes.

Ingredients for Chicken Pot Pie Tater Tot Casserole

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2-3 cloves garlic, crushed
  • 2 cups chicken stock, here’s my recipe for homemade stock
  • 2 cups cooked, chopped chicken – buy or make a rotisserie chicken
  • 3 cups frozen mixed vegetables, like frozen peas, carrots, and green beans (you can also use 3 cups fresh, uncooked vegetables liked diced potato, carrot, etc)
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1/2 cup milk
  • 1 bag frozen tater tots, regular or mini size
  • Salt and pepper to taste

How to Make Freezer Friendly Chicken Pot Pie Tater Tot Casserole

Preheat the oven to 400 degrees and prepare a 9×13โ€ baking dish by spraying non-stick cooking spray, or running a butter wrapper over the dish.

Heat olive oil in a large saucepan over medium high heat. Add onion and saute for 2-3 minutes. Add garlic and saute for 1-2 minutes more. If you won’t like onions, omit this step and move on to the next one.

Heat chicken stock in a medium sized saucepan over medium high heat. If using fresh, non-frozen vegetables, cook the chopped potatoes and carrots in the chicken stock for 6-8 minutes. If using frozen vegetables, donโ€™t add them yet!


Prepare the roux by melting butter in a small saucepan over medium heat. Whisk flour into the butter and add milk. Whisk until the filling is bubbly and thickened – about two minutes.


Pour the roux into the heated chicken stock. Stir until combined. Add the chopped chicken and frozen vegetables (if using frozen veg). Stir again until combined then removed from heat.

Add salt and pepper to taste. This will likely depend on how salty your chicken stock is. I use homemade chicken stock and generally add about ยพ teaspoon salt and ยฝ teaspoon pepper.

Pour the chicken pot pie mix into the prepared 9×13โ€ dish.

Then, top with tater tots.


Bake 25-30 minutes or until brown and bubbly. Remove from oven and enjoy! Serve this yummy casserole with Greek-Style Cucumber Salad or Wilted Lettuce Salad.

  • Pour the roux into the heated chicken stock. Stir until combined. Add the chopped chicken and frozen vegetables (if using frozen veg instead of fresh). Stir again until combined then removed from heat.ย 
  • Add salt and pepper to taste. This will likely depend on how salty your chicken stock is. I use homemade chicken stock and generally add about ยพ teaspoons salt and ยฝ teaspoon pepper.
  • Pour the chicken pot pie mix into the prepared 9×13โ€ dish. Then, top with tater tots. Bake 25-30 minutes or until brown and bubbly.

Notes

Note, you can omit the onion and garlic if you want. I think it adds a nice touch, so I include. But if your kids are anti-onion, just omit that first step and start with heating the chicken stock.
