Ingredients

  • 20 ounces Simply Potatoes® Shredded Hashbrowns
  • 1 egg slightly beaten
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1-1/2 cups 6 oz. shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 8 slices crisply cooked bacon crumbled
  • 3 green onions sliced

Instructions

  • Preheat oven to 450°F.
  • Combine Simply Potatoes® Shredded Hashbrowns, egg, salt and pepper in a medium bowl and mix well.
  • Spray mini muffin pans with non-stick cooking spray.
  • Spoon 2 heaping tablespoons potato mixture into each muffin cup and press mixture firmly on bottom and sides of muffin cups.
  • Bake 20-22 minutes or until potatoes are golden brown.
  • Sprinkle cheese into each potato nest and bake 2 minutes until cheese melts.
  • Top with sour cream, bacon, more cheese, green onions, jalapenos as desired.
