- 20 ounces Simply Potatoes® Shredded Hashbrowns
- 1 egg slightly beaten
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1-1/2 cups 6 oz. shredded sharp cheddar cheese
- 1/2 cup sour cream
- 8 slices crisply cooked bacon crumbled
- 3 green onions sliced
Preheat oven to 450°F.
Combine Simply Potatoes® Shredded Hashbrowns, egg, salt and pepper in a medium bowl and mix well.
Spray mini muffin pans with non-stick cooking spray.
Spoon 2 heaping tablespoons potato mixture into each muffin cup and press mixture firmly on bottom and sides of muffin cups.
Bake 20-22 minutes or until potatoes are golden brown.
Sprinkle cheese into each potato nest and bake 2 minutes until cheese melts.
Top with sour cream, bacon, more cheese, green onions, jalapenos as desired.
