One Pot Greek Chicken Pasta

Ingredients

  • 1 pound pasta of choice {I use whatever I have on hand}
  • 1 pound chicken breast tenderloin chopped into 1 inch pieces
  • 1-2 TBS olive oil
  • 1 medium red onion finely chopped
  • 3 cloves fresh garlic finely chopped
  • 3 roma tomatoes finely diced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup kalamata olives halved
  • 1 tsp dried oregano
  • 1/2 tsp real salt
  • 1/2 tsp freshly ground pepper

Instructions

  • Cook pasta in a large dutch oven. Drain, stir and set aside.
  • While pasta is cooking, dice onions, garlic, and chicken.
  • Add 2 TBS olive oil to the same pot the pasta cooked in.
  • Cook onion and garlic on medium heat for 1-2 minutes and then add chicken and spices. Cook the chicken until it's done, about 5-6 minutes.
  • On low temperature, add noodles back to the pot and stir for 1-2 minutes, until they are heated back through.
  • Finally, turn burner off and add tomatoes, cheese, and kalamata olives.
  • Serve and enjoy!
