Texas Caviar Quinoa Salad

Ingredients

cups
cooked Earthly Grains Quinoa
1
can Simply Nature Organic Black Beans
rinsed and drained
1
cup
corn
1/2
red onion
finely chopped
1-
pint
organic cherry halved
3
organic avocados
halved and cut into bite sized pieces
1
sweet bell pepper
cut into bite sized pieces
Add some finely diced jalapeno pepper if you want some heat
optional
1/4
cup
cilantro
finely chopped
1/3
cup
olive oil
juice of two limes

garlic cloves
crushed
1
tsp
salt
plus more to taste as necessary
Instructions
Cook quinoa per package directions. I cooked one cup rinsed quinoa in two cups broth for 20 minutes. Let cool to room temperature.
Make the dressing by whisking olive oil, lime juice, garlic, and salt.
Add veggies and cilantro to the quinoa.
Add dressing and mix well.
Serve at room temperature and enjoy!
