Texas Caviar Quinoa Salad

Ingredients

  • 3 cups cooked Earthly Grains Quinoa
  • 1 can Simply Nature Organic Black Beans rinsed and drained
  • 1 cup corn
  • 1/2 red onion finely chopped
  • 1- pint organic cherry halved
  • 3 organic avocados halved and cut into bite sized pieces
  • 1 sweet bell pepper cut into bite sized pieces
  • Add some finely diced jalapeno pepper if you want some heat optional
  • 1/4 cup cilantro finely chopped
  • 1/3 cup olive oil
  • juice of two limes
  • 2 garlic cloves crushed
  • 1 tsp salt plus more to taste as necessary

Instructions

  • Cook quinoa per package directions. I cooked one cup rinsed quinoa in two cups broth for 20 minutes. Let cool to room temperature.
  • Make the dressing by whisking olive oil, lime juice, garlic, and salt.
  • Add veggies and cilantro to the quinoa.
  • Add dressing and mix well.
  • Serve at room temperature and enjoy!
