Texas Caviar Quinoa Salad Recipe

I recently decided that I do like quinoa after all. For a long time, I just couldn’t get past the look – I think it looks suspiciously like oatmeal or grits and I can’t really eat anything with that mushy consistency. Well, I finally ate quinoa in California last fall and decided that Yes! I can like it. 😉 But I only had one recipe and it’s for warm quinoa. After brainstorming with my friend Robin for a quinoa salad I might like, Texas Caviar Quinoa Salad was born! And it is fabulous. For real. You have to try this.
Texas Caviar Quinoa Salad Recipe
This fresh salad packs a huge nutritional punch with quinoa the super grain, organic black beans, organic avocados and other veggies, and tangy lime. Have you tried Texas Caviar before? I love it with tortilla chips, but I’d like to find a way to eat it that’s a little bit healthier. This salad fits the bill. Even my picky daughter likes it! It’s not hard to make either, so add it to your dinner line-up. It would make a nice side dish for your Easter meal, and it’s also perfect for picnics and simple family meals too!
Making this beautiful and healthy salad is pretty darn easy. I gathered my favorite ingredients from ALDI USA. {Do you know they accept credit cards at ALDI now?} I know!! It makes me pretty happy too.
- Earthly Grains Quinoa
- SimplyNature Organic Chicken Stock
- Organic cherry tomatoes
- SimplyNature Organic Black Beans
- Organic avocados (they have those now, too!)
- Red onion
- Garlic
- Orange pepper – but you can use whatever color you’d like
- Cilantro
- Lime
Cook the quinoa ahead of time according to package directions and let it cool to room temperature. While it cooks, prepare all of the other veggies.
Want an easy kitchen hack for cutting avocados?
Cut each avocado in half and then score the halves right in the avocado skin. Then all you have to do is use a spoon to scoop out beautiful pieces of avocado! It’s really easy. If you have a hard time getting the avocado seed out, just put the half with the seed in your cupped hand and give it a little squeeze. It should loosen up the seed so that it comes out pretty easily, as long as the avocado is ripe.
After the quinoa has cooled to room temperature, add the veggies and cilantro. Toss well with the dressing and you’re ready to eat!
Texas Caviar Quinoa Salad
Ingredients
- 3 cups cooked Earthly Grains Quinoa
- 1 can Simply Nature Organic Black Beans, rinsed and drained
- 1 cup corn
- 1/2 red onion, finely chopped
- 1-pint organic cherry halved
- 3 organic avocados, halved and cut into bite sized pieces
- 1 sweet bell pepper, cut into bite sized pieces
- Add some finely diced jalapeno pepper if you want some heat (optional)
- 1/4 cup cilantro, finely chopped
- 1/3 cup olive oil
- juice of two limes
- 2 garlic cloves, crushed
- 1 tsp salt, plus more to taste as necessary
Instructions
- Cook quinoa per package directions. I cooked one cup rinsed quinoa in two cups broth for 20 minutes. Let cool to room temperature.
- Make the dressing by whisking olive oil, lime juice, garlic, and salt.
- Add veggies and cilantro to the quinoa.
- Add dressing and mix well.
- Serve at room temperature and enjoy!
Enjoy this delicious and healthy quinoa salad inspired by one of my favorite salsas – Texas Caviar. Next time I make it, I’m going to take it up just a notch by adding in a bit of jalapeno. What would you add?
