Taco Soup – My Go-To Meal

- 1 1/2 pounds ground beef
- 32 ounces crushed tomatoes I used one quart home-canned
- 6 cups beans any combination of kidney, red, or black (the equivalent of 3 cans), undrained
- 4 cups corn
- 4-6 tablespoons homemade taco seasoning equivalent to 2-3 taco seasoning packets
- 1 tablespoon dried parsley
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried dill
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon ground mustard
- 1/4 teaspoon ground pepper
For garnish
- Shredded cheddar cheese
- Organic tortilla chips
- Cilantro
- Sliced jalapeños or banana peppers
- Sour cream
Brown the ground beef. Make sure to cook it thoroughly, until beef is completely brown and the internal temperature has reached 160 degrees.
Dump tomatoes, beans, corn into the pot after the ground beef is cooked.
And seasoning, and bring to a boil.
Reduce heat and simmer for 20 minutes.
Garnish with your choice of extras.
