Taco Soup – My Go-To Meal

Ingredients

  • 1 1/2 pounds ground beef
  • 32 ounces crushed tomatoes I used one quart home-canned
  • 6 cups beans any combination of kidney, red, or black (the equivalent of 3 cans), undrained
  • 4 cups corn
  • 4-6 tablespoons homemade taco seasoning equivalent to 2-3 taco seasoning packets
  • 1 tablespoon dried parsley
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon ground pepper

For garnish

  • Shredded cheddar cheese
  • Organic tortilla chips
  • Cilantro
  • Sliced jalapeños or banana peppers
  • Sour cream

Instructions

  • Brown the ground beef. Make sure to cook it thoroughly, until beef is completely brown and the internal temperature has reached 160 degrees.
  • Dump tomatoes, beans, corn into the pot after the ground beef is cooked.
  • And seasoning, and bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Garnish with your choice of extras.
  • Enjoy.
