Triple Chocolate Mint Cookies Perfect for the Holiday Season & Beyond

Last year my middle daughter got very interested in baking cookies and making hot chocolate bombs. I gave her all my old Christmas recipe magazines and had her pick a few cookie recipes. These chocolate peppermint flavored cookies topped her list.

She made these delicious cookies for the first time and they became an instant favorite Christmas cookie recipe! They are soft and chewy but taste like a Girl Scout Thin Mint!

These cookies are perfect for any holiday party and they taste great with a steaming hot mug of hot cocoa. They also make the perfect addition to cookie platters and Santa doesn’t even mind eating them on Christmas Eve.

What’s the best way to get uniform cookies?

If you’d like your cookies to all be the same size, we recommend using a melon baller to measure the dough. Fill the scoop up and then scrape it along the side of the bowl so the cookie balls all come out roughly the same size.

What’s the best way to prepare a baking pan so the cookies don’t stick?

There are several ways to prepare baking pans. You can spray the pan with non-stick cooking spray, grease it with an empty butter wrapper, line the baking tray with parchment paper, or use a silpat style baking mat. We like the baking mat best because it’s super easy and also eco-friendly. You don’t have to throw it away like parchment paper and you can use it over and over again.

How do I prevent my chocolate mint cookies from spreading too thin?

The best way to prevent excess spreading is to make sure you never place cookie dough on a hot pan. If you’re making multiple cookie batches and have to reuse your cookie sheets, make sure they cool to room temperature before filling them up again.

How to Make Our Favorite Easy Christmas Cookies

  • Preheat oven to 350 degrees F.

  • Melt bittersweet chocolate chips and butter in the microwave. We actually don’t have a microwave, so we use a double boiler over medium heat, stirring often until smooth. Let cool slightly.
  • In a large stand mixer bowl, beat eggs and brown sugar. Stir in vanilla and the melted chocolate and butter mix.
  • In another bowl, combine the flour, baking powder, and salt. Gradually add it to the chocolate mixture in the mixing bowl.
  • Stir in semisweet chocolate chips and the chopped Andes mints.
  • Drop by teaspoonfuls 3 inches apart on prepared baking sheets.
  • Bake for 8-10 minutes or until the edges are set. Allow cookies to cool for 2 minutes before removing them from the pans into wire racks.
  • Allow cookies to cool completely, then store in an airtight container.

Ingredients

  • 1 cup 60% cacao bittersweet chocolate baking chips
  • ¼ cup butter, cubed
  • 2 eggs, room temperature
  • ¾ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • ⅔ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips
  • 36 Andes mint candies, chopped

Instructions
