Quick & Easy Greek Style Cucumber Salad Recipe

Today, we’re diving fork-first into a summer classic: Greek cucumber salad. Made with oregano instead of dill, this Greek cucumber salad recipe is a delicious variation of a classic cucumber salad. It’s my favorite way to use up fresh cucumbers straight from the garden.
Greek Style Quick & Easy Cucumber Salad
Cucumber salad is one of my favorites. Often served in small portions alongside other types of salad in German restaurants, most classic cucumber salad recipes call for fresh dill.
Since I love fresh oregano, though, I’m excited to share this variation of a traditional German cucumber salad that’s bursting with Greek flavors. It’s fresh, tasty, quick to prepare, and my favorite way to make sure not a single cucumber goes to waste.
Ingredients for Greek Cucumber Salad
Crisp cucumbers, thinly sliced red onions, and a sprinkle of crumbled feta cheese, all mingle together for a Mediterranean party in your mouth. (Yes, the leftovers are even better!) The zesty dressing ingredients and fresh oregano make this Greek salad perfect for a fresh side salad or add some chicken for a full meal. Here’s what you’ll need:
- Cucumbers
- Red onion
- Apple cider vinegar
- Fresh oregano, chopped (or 2 teaspoons dried)
- Sugar
- REAL salt
- Freshly ground pepper
- Feta cheese
- Salt and pepper
Best Cucumbers for Salad
I use any cucumbers that are growing in my garden – most often they are pickling cucumbers that I missed so they grew too big. Big cucumbers don’t make great pickles, but they do make delicious cucumber salad.
Choose cucumbers that are still firm and remove any bad or mushy spots. Keep the skin on for added crunch and nutrients.
If they’re so big that they won’t fit through my food processor, I slice them lengthwise in fourths and remove seeds if the seeds are too big.
If you have to buy cucumbers for this recipe, choose the long, thin English cucumbers. They’re very tasty and great in this salad recipe. They also fit in a food processor easier.
How thick should I slice the cucumbers?
Slice the cucumbers as thin as possible. In Germany, the cucumbers are sliced almost paper thin. I find it easiest to use my food processor to slice them.. A mandoline slicer with an adjustable blade also works very well.
Thin slices not only distribute the dressing evenly but also allow the flavors to meld better.
Nobody Wants Soggy Cucumbers
Cucumbers have a high water content that can lead to a watery salad. Lightly salt the sliced cucumbers and let them sit for a few minutes to drain off any excess water. Then, give them a gentle squeeze before tossing them with the other ingredients.

Quick & Easy Greek Style Cucumber Salad Recipe
Quick and easy Greek Style Cucumber Salad featuring fresh cucumbers, fresh oregano, feta cheese and more!
Ingredients
- 3 medium sized cucumbers, peeled and sliced as thin as possible, or one large European Cucumber
- 1 small onion, diced or sliced into rings
- 6 tablespoons apple cider vinegar
- 2 tablespoons fresh oregano, chopped (or 2 teaspoons dried)
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/3 cup crumbled feta cheese
Instructions
Combine cucumbers and onions in a large bowl.
Combine apple cider vinegar, fresh oregano, sugar, salt and pepper, in small bowl and whisk until well combined.
Pour dressing over cucumbers and toss to combine. Cover the salad and place in the fridge for at least 30 minutes, but up to 3 hours ahead for the flavors to really meld.
Before serving, add the feta cheese and toss one more time.

Notes
If you want the sugar to completely dissolve, you will need to heat the vinegar and whisk the sugar until it's dissolved.
