I’ve got two gorgeous eggplants straight from my garden in my fridge with more on the way. And I don’t even like to cook eggplant all that much. I’ve made and enjoyed eggplant parmesan before, but what the heck else can you make with eggplant, I wondered. So I went on a Pinterest search today and came up with a dozen, absolutely delicious {and beautiful} ideas.
