My blogging buddy Cara from Sweet Hersey Living {remember her pierogi tutorial?} told me last week that the new buzz among food bloggers is SKINNY. I had no idea. I really must get with the times. Anyhow, a lot of my recipes probably don’t qualify for skinny, but this one actually does! I was thrilled to figure that out {and so was my slighting expanding waistline…} 🙁

Skinny Chicken with Artichokes & Lemon

Last night I tried a new chicken recipe – Skinny Chicken with Artichokes & Lemon. I ripped this recipe out of an All.You magazine several years ago, but just now finally got around to trying it! My husband and I liked it a lot, though, only 1 out of 4 children did…they said it tasted too much like wine, but I really disagree. Sometimes it’s really bad when they watch me cook. 😉

This chicken is pretty easy and very tasty – a one dish meal you can have on your table in 30 minutes!

Skinny Chicken with Artichokes & Lemon

Ingredients 

  • 1 1/2 lb boneless, skinless chicken thighs
  • Salt & pepper
  • 1/4 cup all purpose flour
  • 2 Tbsp oil
  • 1 cup white wine
  • 1 12 oz jar artichoke hearts, drained and coarsely chopped
  • 1 Lemon, thinly sliced
  • 1 tsp finely chopped fresh thyme

Instructions 

  • Heat oil in a large skillet over medium high heat.
  • Rinse and pat dry chicken, then sprinkle it with salt and pepper and dredge in the flour.
  • Brown the chicken on both sides, cooking about 2-3 minutes per side.
  • Add wine and artichokes. Bring to boil, reduce heat to simmer, cover, and cook for another 20 minutes until the chicken is cooked through.
  • Add lemon to chicken and cook 2-3 more minutes.
  • Garnish with thyme and serve!
