It’s easier than you might think to make homemade breakfast sausage (patties or crumbles), and doing so gives you full control over ingredients! If you like a savory, slightly spicy yet full of flavor sausage, this easy recipe is for you!

Savory Homemade Breakfast Sausage – Patties or Crumbles

Not only can you use this recipe to make homemade breakfast sausage, but you can also make up a large batch of spice mix that’s ready to go when you need sausage on the double. I recommend tripling the spices for your own sausage spice mix at a very minimum! 

I know a lot of people like sausage patties, but as a lazy from-scratch cook, it’s almost always sausage crumbles at our house. My kids fight over the correct terms – eggs and sausage OR sausage and eggs. My mom says it one way; I say it the other. 

We also always make scrambled eggs with sausage, and sausage scrambles are what we use. After cooking the sausage, I lightly whisk 12+ eggs and then cook the eggs directly in the same pan with the sausage. One dish – less cleanup. I also generally only use 1/2 a pound of sausage and save the other 1/2 pound for another day.

I know a lot of people like sausage patties, though, so I’m giving instructions for how to make them too. Maybe you aren’t as lazy of a cook as I am! Whichever you prefer, here’s how to make a delicious from-scratch breakfast sausage. By the way, this sausage is also delicious in my Thanksgiving Sourdough Stuffing recipe!

1 pound ground pork, seasoned with:
1/2 teaspoon REAL salt
1 teaspoon dried parsley
1 teaspoon basil
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
3/4 teaspoon ground pepper
1/2 teaspoon red paper flakes


How to Prepare Homemade Breakfast Sausage

In a large bowl, combine pork and all spices. Mix well.

To make patties, form pork mix into 12 small balls. To make them uniform in size, use a medium sized cookie baller.

Heat a cast iron skillet to medium. Spray lightly with cooking spray, or use a small dab of bacon grease. Cook on medium for five minutes, then flip to the other side and cook until pork reaches 160 degrees and there is no pink left. Remove to paper towels and serve as desired.

To make crumbles, simply cook pork in a medium skillet until it reaches 160 degrees and there is no pink left.
