Scrumptious {Blue} Cornbread

A homemade cornbread is one of the finer things in life, especially when you use an easy cornbread recipe, like I’m sharing today! Cornbread is a fuss free bread – easy to make and delicious to eat! And there’s no need to buy cornbread mixes, either. Really! Cornbread from scratch is that easy.

SONY DSCWhich we harvested in late summer. I picked the nicest ears to show you. A lot of it ended up a little misshapen, but it still works just fine!

IMG_1329After I harvested the corn {or maybe my husband did that part…} I used this awesome machine to get the kernels off the cobs {or maybe my husband and kids did that part, too. I can’t really remember now…} My in-laws brought this monster to me as a souvenir after their travels last summer. I love it and it soooo cracks me up that I got a souvenir in the first place, and second of all, that these are the types of souvenirs I get! I love this beast but I fear for my kids’ fingers. They are highly forbidden from touching it unless an adult is around.

DSC_0003I definitely ground it in my Nutrimill, which I use to make all of my flour, and the cornmeal looks like this! It’s so pretty! I’m in love with the blue cornmeal.

But really, all of this is just superfluous information. To make your own cornbread, just combine dry ingredients and wet ingredients separately. Bake at 400 degrees for about 20 minute. Using butter or better, bacon grease, to cook this cornbread makes it fantastic!

Easy Cornbread Recipe

  • 1 cup flour {I use freshly ground hard white wheat}
  • 1 cup cornmeal {I use freshly ground blue cornmeal}
  • 3 TBS sugar
  • 1 TBS baking powder
  • 1 tsp salt
  • 1 TBS butter
  • 2 eggs, beaten
  • 1 cup milk
  • ¼ cup melted butter


  1. Preheat over to 400F. In a medium bowl, stir together flour, cornmeal, sugar, baking powder, and salt. Set aside.
  2. Melt 1 TBS butter {or bacon grease} in a round cast iron skillet.
  3. In a small bowl, combine eggs, milk, and butter. Add to the flour mixture and stir until just mixed.
  4. Pour into the hot skillet and bake for 15-20 minutes.
  5. Serve with honey and or butter. Enjoy!

  1. I don't think I have ever used blue corn for cornbread. This looks so good. i will have to look for blue corn when I go shopping - I would love this with a big pot of soup
