Creamy Chicken Tortellini Soup is perfect for cold days. You can’t go wrong with quick and delicious soup. It’s rich, hearty, and creamy comfort food the whole family will love!

Creamy Chicken Tortellini Soup For Cold Winter Nights

With a little planning, you can use so many from scratch ingredients to make this soup extra healthy. I love this soup because I can make it with chicken I raised myself, tomatoes I grew in my garden, and chicken stock made from my chickens.ย 

Combine healthy ingredients with a quick cook time, and you have a complete one pot meal on the table is 30 minutes or less!

What type of chicken should I use creamy chicken tortellini soup?

Cooking with a whole chicken is one of the most economical cuts of meat, but so many people donโ€™t know what to do with a whole chicken. My book shows you just how versatile the whole chicken actually is! 

I make this recipe super easy by cooking a whole chicken in my instant pot. I freeze the meat into 2, 3, or 4 cup portions to quickly and easily use in recipes like this. Then I use the chicken carcass to make my own stock, which I also freeze. When we want this soup, I just pull out all the components and get busy!

Of course, you can also make it using ingredients from the grocery store! If you donโ€™t want to cook and clean a whole chicken, you can also use boneless skinless chicken breasts.ย Or, if you have leftover rotisserie chicken, that works very well in this recipe too!

What type of tortellini should I use in soup?

You can use a dried cheese tortellini – I like the Trader Joe’s brand. Or, you can use a fresh tortellini too. Costco makes a nice fresh cheese tortellini that I sometimes use in this recipe too. It doesn’t really matter which tortellini you use, as long as you follow the cooking instructions on the bag.

What should I serve with these delicious chicken soup?

Ooooh – I’m glad you asked! Here are a few of our favorite things to serve with this delicious soup:

Homemade sourdough bread – our favorite ever sourdough bread with sample timelines and lots of tips to help you get it just right!

Sourdough discard biscuits – if you’re family has had enough bread – serve them biscuits!

Homemade refined sugar-free cornbread – if sourdough bread isn’t your jam

Wilted lettuce salad – one of our favorite salads of all time, just like my grandma used to make.

Ingredients for Creamy Chicken Tortellini Soup

  • 2 teaspoons avocado oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups homemade stock or broth
  • 1 (14.5 ounce can) petite diced tomatoes
  • 1 (14.5 ounce can) tomato sauce (Note, I can tomatoes from my garden and have also used a quart of home canned crushed tomatoes with great success in this soup as well.)
  • 1 tablespoon dried basil
  • 2 cups dried cheese tortellini, or frozen if you prefer
  • 3 cups cooked, chopped chicken. About 1 pound boneless, skinless chicken breasts
  • 3 cups packed chopped spinach
  • ยฝ cup freshly grated Parmesan cheese
  • 1 cup half and half, or heavy cream if you prefer a richer soup
  • Salt and freshly ground black pepper to taste

How to Make this Delicious Soup

Heat oil in a large pot over medium high heat. Then add the chopped onions and cook for 2-3 minutes until fragrant. Stir in the garlic and cook for 2-3 more minutes, or until the onions are translucent.

Add the chicken broth, tomatoes, tomato sauce, and basil and bring mixture to a boil.

Add the dried tortellini and cook per instructions on the package. When the tortellini have 3 minutes left to cook, add the chicken and spinach. Once the tortellini are finished cooked, turn the temperature to low and add the Parmesan cheese and half and half. Add salt and pepper to taste and enjoy.
