Creamy Family Favorite Recipe Chicken Florentine Pasta

What is Chicken Florentine?
The Florentine sauce refers to a creamy sauce made with butter, cream, and spinach. Adding in mushrooms, chicken, and the crunch of toasted almonds make this a pasta dish you will turn to time and again!
The great thing about this recipe is its versatility. Don’t like mushrooms? No problem. Omit them. Unsure about the almonds – sprinkle on a few at first to try. If you don’t like them, omit them as well. Want to try a different protein? I think shrimp would be lovely in this dish!
Tarragon. Some people love it and some people hate it. I like it in cooking – it’s fabulous in these keto pork chops! If you don’t like tarragon, Italian Seasoning or Dried Oregano might be a good substitute.
Wine. There is wine in the recipe. I love cooking with wine, honestly. The alcohol cooks off during the simmering process and what’s left is a lovely flavor, a bit of acidity, and the punch this recipe needs. You can substitute extra chicken broth if you like, but I don’t really recommend it.
Chicken Florentine Pasta Ingredients:
- 1/2 cup whole toasted almonds
- 1 pound fettuccine
- 3 tablespoons butter
- 1 small yellow onion, diced
- 2 cloves garlic, mined
- 1/2 pound mushrooms, sliced
- 1/4 cup flour
- 1/4 cup chicken stock
- 1 cup milk
- 1 cup heavy cream or half and half
- 1/4 white wine
- 1 teaspoon tarragon
- 2 chicken breasts, cubed, about 1 – 1 ½ pounds
- 6 oz fresh baby spinach
- salt and pepper to taste
Cooking Tips for Making this Chicken Florentine Pasta Recipe
I know a lot of people, me included, are immediately suspicious when they see the words easy recipe – cooks in 30 minutes! It’s not always true. Here’s how you CAN make this recipe in 30 minutes!
First, read through the entire recipe. Get out shelf stable ingredients before you plan to make it.
When it’s time to cook, start the pasta and toast the almonds. As the almonds are toasting and the pasta is cooking, prep the chicken and the vegetables.
Now, melt the butter and get cooking. I personally cook the chicken and the vegetables all together at the same time. I’m sure a professionally trained chef would not agree with this tactic, but it honestly works for me so I do it.
Add wine to the pan and deglaze. Whisk together the chicken stock and flour. Add to the chicken and vegetable mixture and stir well.
Finally, add the milk and half and half, tarragon, and spinach. Stir carefully to allow the spinach to wilt. Simmer for a couple minutes.
Add the pasta, stir well to combine, and it’s time to eat!
Serve with: Tossed Salad with Broccoli, Feta, and Sunflower Seeds
One Skillet Creamy Chicken Florentine Pasta
Ingredients
- 1/2 cup whole toasted almonds
- 1 pound fettuccine
- 3 tablespoons butter
- 1 small sweet onion, diced
- 2 cloves garlic, mined
- 1/2 pound mushrooms, sliced
- 1/4 cup flour
- 1/4 cup chicken stock
- 1 cup milk
- 1 cup heavy cream or half and half
- 1/4 white wine
- 1 teaspoon tarragon
- 2 chicken breasts, cubed, about 1 - 1 ½ pounds
- 6 oz fresh baby spinach
- salt and pepper to taste
Instructions
- If almonds aren’t toasted, preheat oven to 325 F. Place almonds on a pan in a single layer and bake for 7-8 minutes, until fragrant and golden brown. Pay attention during the last minutes of cooking as they can burn quickly
- Chop almonds and set aside.
- While the almonds are toasting, cook the fettuccine according to package instructions. When fettuccine is cooked through, drain and set aside.
- Melt butter in a large skillet over medium high heat.
- Add chicken, onion, garlic, and mushrooms and cook until soft, about 5-7 minutes.
- Add wine to chicken, stirring to remove the crusty bits from the bottom of the pan. Allow wine to deglaze for 2-3 minutes.
- In a separate bowl, whisk together flour and broth until smooth.
- Pour into the skillet and stir well.
- Add milk to the skillet and stir until the sauce begins to thicken.
- Add the herbs and spinach and stir carefully.
- Stir pasta into the sauce mixture, sprinkle with almonds and serve.
